Rigatoni, White Beans, and Sausage: Eat What You Love

Good Evening Friends

I have a new recipe for you and its really good and very simple to make. I got it from my Eat What You Love book, which you can find at http://www.marlenekoch.com.

Makes 6 Servings:

8 ounces rigatoni

2 cups of reduced sodium chicken broth

3 garlic cloves, minced

3/4 pound of turkey kielbasa sausage, thinly sliced

1 teaspoon of dried oregano

1 tablespoon of olive oil

1 14 ounce of cannellini beans, drained

1 14 ounce of no salt added diced tomatoes, drained

6 cups of baby spinach

6 tablespoons of finely grated fresh parmesan cheese

Instructions:

1: Cook pasta according to package directions and then drain and set aside.

2: Pour chicken broth and garlic into the same pot. Place over medium-high heat and bring to a simmer. Add the sausage, oregano, and olive oil. Stir well!

3: Stir in the beans, tomatoes, and cooked pasta. Then place the spinach on top of mixture, cover with lid and turn off heat. Allow to steam for about 1minute. Stir mixture.

4: Serve with a heaping tablespoon of Parmesan cheese on top.

Cowboy Spaghetti

Since I have started this journey, I’m trying to cook more at home and not eat out so much. I found this recipe on The Big Weight ( http://the-big-weight.blogspot.com/), Hilary had this recipe called Cowboy Spaghetti from a book called Eat What You Love. I brought the book online b/c the reviews were outstanding.

Ingredients:

  • 3 slices center-cut bacon, chopped
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 3-4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1/2 lbs lean ground beef
  • 1/2 pound lean ground turkey
  • 1/8 tsp black pepper
  • 1 tsp hot sauce (like Tabasco)
  • 2 tsp Worcestershire sauce
  • 1 (14 oz) can fire-roasted chopped tomatoes
  • 1 (15 oz) can tomato sauce
  • 3/4 cup (3 oz) reduced-fat shredded cheddar cheese
  • 8 ounces spaghetti

Nutrition:

4 Points Weight Watchers

Calories: 350, this is including the pasta.

Step 1

Add the bacon and sauté ( I got already cooked bacon and chopped it up)


Step 2

Add the onions and green peppers and sauté for another 5 minutes

Step 3

Add the beef and turkey and cook until brown

Step 4

Add the pepper, Worcestershire sauce, can tomatoes, and tomato sauce. Stir and simmer for another 10min

Step 5

Add pasta and 1/2 cup of the sauce and some cheese. Enjoy!!
