Sweet Potato Turkey Meatloaf

Dashing Dish

1 lb Lean ground turkey
1 Large sweet potato
1 Egg
1/4 cup Old fashioned oats
1 Small sweet onion
2 tbs Low sugar maple syrup
1/4 cup Low sugar ketchup
1 tsp Mustard
1/4 cup Grated parmesan cheese
1/4 tsp Pepper
1/2 tsp Salt
2 pkts Stevia (or 1/2 tsp sweetener of choice)
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Poultry seasoning
2 tbs Low sugar maple syrup
2 tbs Low sugar ketchup
1/2 tsp Mustard

Calories: 162 per serving

1) Preheat the oven to 375. You can use 8 mini meatloaf pans or one loaf pan. Spray the pans with cooking spray. 

2). Cook the sweet potato for 5 to 6 minutes

3) Combine the rest of the ingredients in a bowl and then add the sweet potato. Do not add the topping.

4) Measure out 1/2 cup of mix for each mini loaf ( or place meat mixture in one large bread pan)

5) Mix the ingredients for the topping and brush the mixture on top of each meat loaf. Cook for 35 to 45 minutes.

I got the recipe from Hungry Girl’s new book, but she has something similar on her website and the link above will take you there. The recipe I made from the book is below.


3 Cups of broccoli slaw

2/3 Cup of canned crushed tomatoes

1 Tbsp of tomato paste

1 tsp of brown sugar ( not packed)

1 tsp of Worcestershire sauce

1 tsp of red wine vinegar

5 ounces of raw extra lean groun beef (4 % fat or less)

Dash of salt, black pepper, chili powder, and paprika


Spray a large skillet with nonstick spray, medium-high heat

Add the broccoli slaw and 1/2 cup of water, cook and cover for 10 to 12 minutes

If the water hasn’t evaporated you can continue to cook for another 2 to 3 minutes

Meanwhile in a small bowl mix all the remaining ingredients except the beef and seasonings.

Transfer the broccoli slaw to a medium bowl and blot away some of the moisture.

Re-spray the pan and add the beef and seasoning, cook the beef for 4 to 5 minutes or until its fully cooked.

Now add the tomato mixture and the slaw to the beef, cook and stir until hot about 2 minutes.
