St. Patricks Day: Guinness Fudge Cupcakes with Baileys Irish Cream Icing

St Patrick’s Day is on Monday March 17th, so I wanted to make cupcakes and I found this awesome recipe at KateOLynch www.kateolynch.com/home/boozy-cupcakes-part-one.

Ingredients for Guinness Fudge Cupcakes:

1 box Dark Chocolate Brownie Mix (Family size)
1/2 cup oil ( I used vegetable oil)
2 eggs
1/4 cup Guinness Extra Stout Beer
1 cup Dark Chocolate Chips

Instructions:

Heat the oven for 350 and make for 20 to 25 minutes.

Ingredients for the Bailey’s Buttercream Icing

2 sticks Unsalted Sweet Cream Butter (softened)
3 tablespoons Bailey’s Irish Cream
4 tablespoons Heavy Whipping Cream
4 cups Powdered Sugar

Instructions:

Place all the ingredients in a bowl and mix together with a mixer.

I don’t have a big mixer, so I put the butter in the microwave to get softer so mixing would not be so hard.

My brother in law and sister love Ireland, so I got a cupcake box at the store and placed 4 yummy cupcakes in the box for them. They just ran a 8k in VA Beach this weekend, so they deserve a cupcake.
