Olive Oil-Flavored cooking spray
1 1/2 tablespoons finely chopped shallots
1 1/2 cups instant brown rice
1 cup of fat free, lower sodium chicken broth
1/4 teaspoon salt
1/8 teaspoon of pepper
1/4 cup of sliced almonds, toasted
1 tablespoon of fresh parsley (optional
1) Heat a medium saucepan over medium heat. Coat the pan with cooking spray. Add shallots; sauté 1 minute or until crisp-tender. Add rice; sauté 1 minute.
2) Stir in the chicken broth, salt, and Pepper. Bring to a boil; reduce heat, and simmer for 10 minutes or until rice is tender and liquid is absorbed. Add the almonds.
